Crispy and tasty potato kachori with wheat flour.

INTRODUCTION :
Potato kachori with wheat flour. serve it with green coriander dip, sauce or with any desired dip. It's very tasty and very easy to prepare.


INGREDIENTS: For atta kachori.
1.Wheat flour - 2 cups (250 grams),
2.Potato (boiled) - 3 (300 grams),
3,Semolina - 1/4 cup,
4.Ghee - 3 tbsp,
5.Fennel seeds - 1/2 tsp,
6.Green chilli (finely chopped) - 2,
7.Green coriander (finely chopped) -2 to 3 tbsp,
8.Ginger (grated) - 1 tsp,
9.Coriander powder - 1 tsp,
10.Red chilli powder - 1/2 tsp,
11.Dry mango powder - 1/4 tsp,
12.Turmeric powder - 1/4 tsp,
13.Garam Masala - 1/4 tsp,
14.Salt - 0.75 tsp,
15.Oil - for frying.



MAKING :
First of all we have to take 2 cups of wheat flour in a bowl. Add 1/4 cup of Semolina, 1/2 tsp of salt and 3 tbsp of ghee/oil. Mix all the ingredients well. Now, add some water to it and kneed its soft 

Cover and let the dough rest for half an hour.

STUFFING :
Take 3 boiled potatoes. we have to peel and grate them.

Preheat a pan. Add a tablespoon of oil to it. Add a 1 tsp of fennel seeds. It will help to enhance the taste of kachori. Add 2 green chilli (finely chopped) and 1 tsp of ginger to it. Roast the spices for a while. Add 1/4 teaspoon of turmeric powder and add grated potato to it. Add 3/4 tsp of salt, 1 tsp of coriander powder,1/2 teaspoon of red chilli powder, 1/4 teaspoon of garam masala and a 1/4 teaspoon of dry mango powder to it. Now mix all the ingredients very well. Stir and roast potato along with the spices for a while. Add some finely chopped green coriander to it. Roast the spices for 2 to 3 minutes.

Now the stuffing is ready.

It's time to mash the dough for a while and make it's texture smooth. we have to divide the dough into two equal halves, Divide it into lumps. We can make these of our desired sizes. Now preheat oil to fry kachoris.
Now lift a dough lump and roll it. Hollow it with the help of thumb and fingers. Place 1 to 2 teaspoons of stuffing inside it. Seal the stuffing with dough. Seal it well. Press it downwards and stick it. Press it. Stuff 3 to 4 kachoris first. We have to check the temperature of oil. Add a dough lump to the oil. The lesser than medium heated oil is required to fry kachori.

Lift a stuffed kachori, and press to expand using palms. Applying the lesser amount of pressure on it. Expanding it with hands is more beneficial, kachori won't split. Prepare all the stuffed kachoris likewise. And now add the kachoris for frying. 

Do not touch it for 5 to 6 minutes. Flip them once they start floating. Let them fry. Keep the flame on low. We have to flip and fry these until they become golden brown.

Keep the flame medium. Flip them and fry until they become crispy. Kachoris have to become brown. We have to drain these out. We have to fry all the stuffed kachoris likewise. Switch off the flame. 11 to 12 minutes was acquired to fry the single round of it. 

Potato and wheat flour kachoris are ready to be served. It is tastier and crispier to eat. Serve it along with green coriander dip, sauce or with any desired dip.
